Bangkok Smoothie

Bright, sweet, and a little spicy, this Bangkok Smoothie recipe has enough pep to transport you to the balmy streets of tropical Thailand.
Ingredients
  • 2 cups pineapple (best if frozen beforehand)
  • 2 cups coconut water
  • 2 stalks lemongrass (tender centers only--about 2 teaspoons minced)
  • 2 teaspoons minced ginger
  • zest of a quarter of a lime
  • ½ cup cilantro leaves
  • ½ cup Thai basil leaves
Instructions
  1. In the jar of a blender, combine the pineapple, coconut water, lemongrass, and lime zest with 4-5 ice cubes and blend on high until completely smooth.
  2. Toss in the cilantro and thai basil and pulse until they are blended into little bits, but not completely blended. I like to leave slightly larger bits of herbs because when you take a sip, you get little bursts of flavor when you chew on the herb pieces.
  3. Pour into glasses and serve.
Notes
-Can't find Thai basil? Use regular Italian basil but add in a pinch of ground fennel to make a cheater's version of Thai basil.

-Don't throw away the tough outer stalks of the lemongrass! Bash them with the dull end of a knife and throw them into 2 cups of boiled water. Let it steep, preferably covered, for 10 minutes and you will have the most refreshing lemongrass tea.
